Vegan Banana Pancakes

Vegan Banana Pancakes

Yield: Makes 4 pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1 ½ tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup dairy-free milk
  • 1 tbsp apple cider vinegar
  • ½ tsp vanilla extract
  • 2 bananas, sliced

Cooking Directions

  1. Add all dry ingredients to a medium bowl. Stir to combine
  2. Add wet ingredients to the dry mixture and whisk together, taking care not to over mix.
  3. Add sliced bananas last to the mix.
  4. Let batter sit for a couple minutes while your pan/griddle heats to medium-low.
  5. When your cooking surface is heated, lightly grease it (I use a coconut oil or vegan butter).
  6. Pour about ¼ cup of batter onto your cooking surface.
  7. When the top begins to bubble, flip the pancake and cook until golden.
  8. Serve warm with pure maple syrup!
