Vegan Banana Pancakes

Yield: Makes 4 pancakes
Ingredients
- 1 cup whole wheat flour
- 1 ½ tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup dairy-free milk
- 1 tbsp apple cider vinegar
- ½ tsp vanilla extract
- 2 bananas, sliced
Cooking Directions
- Add all dry ingredients to a medium bowl. Stir to combine
- Add wet ingredients to the dry mixture and whisk together, taking care not to over mix.
- Add sliced bananas last to the mix.
- Let batter sit for a couple minutes while your pan/griddle heats to medium-low.
- When your cooking surface is heated, lightly grease it (I use a coconut oil or vegan butter).
- Pour about ¼ cup of batter onto your cooking surface.
- When the top begins to bubble, flip the pancake and cook until golden.
- Serve warm with pure maple syrup!
